Sausage Cheese Drop Biscuits: A Great Grab and Go Breakfast

Hello friends! Do you remember how in my post about Hacks to an efficient morning routine (aka how to sleep as late as possible and still be on time) I mentioned a quick grab and go breakfast?  Often times that grab and go breakfast is a granola bar, or a package of crackers and cheese, or one of those little instant breakfast things that you dissolve in a glass of milk.  Then, I get tired of all those “quick” solutions and I actually want some real food!

I like these sausage cheese drop biscuits because they freeze well and the recipe makes a fairly big batch. Another point that these have in their favor is that they are MUCH less expensive than the packaged store bought breakfasts.  They think very highly of some of those and I feel like the sausage in many of the frozen store bought sausage biscuits is VERY processed.

Common Ingredients

The only part of the ingredients that I usually have to make a special trip for is the baking mix.  I used Bisquick this time because it was what I had on hand, but I have also used the generic kind and it works just fine.  The sausage is a matter of personal taste.  Personally, my favorite sausage is the “sage” flavor, but you can use whatever you want.  I have also gotten the kind that is freshly made and packaged in the meat section with the rest of the pork.  That’s actually what I used this time because I can buy 2 lbs of sausage for what I would normally give for 1 lb of the pre-made stuff.  Just like any meat, freeze any extra or use it for something else.

The cheese type is also a matter of personal preference, my favorite is sharp cheddar because it goes well with the sausage, and the baking mix tames it down a lot.  I used 2 cups in this recipe, but if you really like cheese feel free to add more.  The dough is really sticky, but don’t let that deter you.  I just used a big spoon to drop them on to my baking sheet.  I used baking spray on the sheet and they came out just fine.

These drop biscuits remind me somewhat of sausage balls, but with much more biscuit taste.  I did not add much pepper, but feel free to add it to taste, or add some hot sauce if you like things spicy!  My version is mild because one of my sons LOVES hot stuff, but the rest of us are rather fond of keeping our taste buds. 😛

Add the milk, combine all ingredients, then drop by big spoonfuls on to a cookie sheet that was sprayed with baking spray, and bake at 400 degrees F for 15-17 mins.

Recipe for Sausage Cheese Drop Biscuits

Ingredients:

 

1 lb Sausage, use your favorite kind!

2 ¼ C Baking Mix

2 Cups (or more!) Sharp cheddar cheese

1/2 tsp garlic powder

Pepper to taste (I did about 10 cranks with my pepper grinder)

¾ C Milk

Edit: My oldest son suggested adding about 4 cooked pieces of crumbled bacon. Genius! But I will leave that as “optional”

Instructions:

Preheat oven to 400 F.  Spray 2 baking sheets with baking spray or use parchment paper.  Combine all ingredients in a large bowl, adding milk last.  Mix together with an electric mixer, or by hand.  (Take care not to let your dough clog up your electric mixer!)  The dough will be very sticky. Drop by large spoonfuls on baking sheets, spaced about an inch apart.

Bake in the oven for about 15-17 mins.  (Can also bake in 450 F oven for 13 mins, if you are in a hurry, but watch them in order to make sure they don’t burn! Mine nearly did and I had them on the bottom oven rack.) Check to see if they are done (internal temp 160 F to make sure the sausage is cooked), and enjoy!

 

My food critics (my sons) highly approve of this recipe.  I bagged up about a 1/3 of them in a plastic bag for them to eat in the car, and when we got to our destination about 20 mins later, they were holding an empty bag! I think they are getting the proverbial “hollow legs.”
